I like looking at them as well. I love it when a queue line is in the middle of the ride and just surrounded by track. X-Flight at SFGAm has exactly that. Being surrounded by the ride itself seems to build the excitement of riding even more.
I love watching them operate, especially when your seeing a ride for the first time, it can be a immersing experience. I like doing it in queue lines, just minding my own business, appreciating my surroundings, not only prepares you for what your about to experience and passes the time nicely.

I just enjoy the excited expressions on the rider's faces, the sound of the lifts and the coaster itself, and the sight of the train gliding on the tracks up hills or upside down. I was always marveled by roller coasters, and I always will be. So yes, roller coasters are eye candy.
