Let's chuck in Hayabusa and the original Vampire too.
Original Vampire is going strong - the original Bat maybe? :-b

I would definitely be having these in my park:
Crystal Beach Cyclone
Steel Phantom
Virginia Reel (maybe the Coney Island one)
Blackpool's Wild Mouse (obviously)
American Adventure log flume
Titan from Space World
Duelling Dragons

And maybe the vintage cars from Alton Towers, my favourite ride when I was 6!
 
Good call on the Crystal Beach Cyclone. That thing looked absolutely insane. IIRC, they had a medic standing by at all times for that ride.

Also the Long Beach Cyclone Racer, built on a pier and disgracefully removed in the name of ‘progress’.
 
Have you seen the in game NL2 recreation? There's a whole straight section with just tiny airtime hills! The drop into the turn looks insane too.

Schwarzkopf City: Looping Star, Bobbejaanland, Original Doppel Looping, and Tidal Wave/Viper/Greezed Lightnin'
Swing Corner: Original Bat, Hayabusa, Eagle Fortress, pretty much every other defunct Arrow swinger
Wood Town: Steel Beast (RMC Son of Beast), Crystal Beach Cyclone, Dania Beach Hurricane, Thunder Eagle
Defunct Disney: Ailen Encounter, Original Star Tours, Peoplemover, A Bugs Land, etc
Lost Universal: Dueling Dragons, Twister, Back to the Future, every other defunct universal attraction
 
Lightning Loops, SFGAdv (because what's better than an Arrow shuttle loop? Two interlocking ones)
Orient Express, WOF (because what's better than one set of interlocking loops? Two, of course)
Reel, BPB (in its 70s/80s colours)
Big Bad Wolf, BGW (looked nice)
Cyclone Racer, Long Beach (massive wooden racing coasters look nice)
Disaster Transport, CP (nothing wrong with being the most 80s roller coaster I could think of)
Greatest Show On Earth, BPB (oooooooooh suspended dark ride)
Flying Saucers, DL (to add a bit of retro future unreliability)
People Mover, DL (two rail monorail, yes that doesn't make sense)
Cable cars (just pick any defunct cable car ride, as long as it's one with small brightly coloured cabins)
 
Out of all defunct rides out there: I would make a park out of
Dueling Dragons (not Dragon Challenge, since that thing barely dueled)
Texas Cyclone (gotta have AstroWorld in there somewhere)
Pitt Fall (need a drop tower, cuz why not)
Big Bad Wolf (iconic Arrow suspended coaster)
Son of Beast (RMC I-box plus new support structure)
Chang (it got relocated, that counts I think)
Texas Tornado (probably most intense Schwarzkopf ever)
Blackpool's Wild Mouse (also iconic)
Zambezi Zinger
