How Do Single Rail Rides Stay On

How does the wheel arrangement on single rail suspended rides work? It seems to me that really any arrangement and the coaster car would just slip off the track due to the metal bending or something.

In simple terms, they're stabilised by the second rail, which is below the main rail.

You can kinda see the second set of wheels, and the wear marks on the second rail, below the first set in this picture:

On the 'inverted' coasters, the wheel assembly is a 'V' shape on top of the track, and they have have a horizontal assembly underneath the track which grips on to the 'fin' that runs along the track.
